This is one of our favourite menu, it’s easy to prepare and so delish!
Forget a takeaway, this will make perfectly good spicy oven-fried chicken at home. They taste as good as fried chicken, no more deep frying!
Ingredients
1 medium halal HMC chicken, cut into 8 parts (2 breasts, 2 thighs, 2 legs, 2 wings) or you can cut it smaller if you want.
3 tsb olive oil/vegetable oil
Marinate ingredients
1 clove of garlic (grated)
1 tbs corriander powder
1 tsp salt
1 tbs water
Flour Mixture Ingredients
1 tsp chili powder
1 tbs paprika powder
75g plain flour
2 tbs corn flour
1 tsp white pepper powder
1/2 tsp mixed herbs
2 tsp salt
*tsp: tea spoon
*tbs: table spoon
Method
1. Marinate the chicken for 15 minutes.
2. Mix the flour mixture ingredients and dredge the chicken in the flour mixture one by one. Makesure you coat the chicken with flour thoroughly.
3. Preheat oven to gas mark 8. Coat the oven tray with 3 tsb olive oil/vegetable oil and leave it in the oven until sizzling (approx 3 mins).
4. Arrange the pieces skin-side up in the oven tray so the largest pieces are in the center (the breasts) and make a little room between pieces so they aren’t crowded in the pan.
5. Bake the chicken for 15 minutes on each side.
Check for doneness by piercing the meat, the juices should run clear.
